I love making salads as soon as the weather starts to get warmer and often take a recipe and make it vegan.
The roasting gives the vegetables a great flavour and makes them taste deliciously sweet in salads.
4 red peppers seeded and quartered
8 cherry tomatoes
115g vegan feta (I like to use the Violife one or use a vegan cream cheese of your choice)
1 galic clove
1 tablespoon fresh basil
Salad leaves of your choice
1 few red grapes chopped
Salt & pepper
Place peppers on roasting tray, cut tomatoes in half and place inside peppers
Combine the vegan cheese, garlic, basil and chopped then season with salt and pepper
Fill the peppers with the mixture
Bake a preheated oven 200C for 20-25 mins
Once ready arrange salad, grapes and chopped cucumber and red onion on a plate. Sit the roasted peppers on top and enjoy.
